1 - Brief introduction of cassava and Garri Cassava is a sub-shrubs, perennials.

Tuberous roots were cylindrical, of different varieties, tuber number and thickness differences.

The cassava root contains a high amount of starch containing proteins, fats and ash is rarely accounted for 25% to 32%, the starch content of fresh cassava tuber.

Cassava garri processing line is to process raw cassava roots/tubers into food-grade garri.

Garri comes in various consistencies, which can roughly be categorized into rough, medium and smooth.

There is also a variation in colour; “white” and “yellow” garri.

The yellow garri is prepared by frying with the addition of palm oil to give it a yellow colour; while white garri is fried without palm oil.

Gari is a fermented and gelatinized dry coarse flour, very popular in West Africa and a staple food in Nigeria, Ghana, Benin and Togo.

Its ability to store well and its acceptance as a "convenience food" is responsible for its increasing popularity in the urban areas of West and Central Africa.

It is often consumed as the main meal in the form of a dough or a thin porridge.

Both are prepared in the household by mixing dry gari with hot or cold water and cooking and are served with soup or stew.

Gari is also eaten as a snack when mixed in cold water with sugar, and sometimes milk.

It swells three to four times its volume when mixed with cold water.
